I assume this is also about taste, and what we know. I still haven't tried Zappa myself.

Slash's guitar work in Nightrain hooks me everytime I hear it.

I saw the title as best guitarist and to me best is who is the most skilled. Favorite is who you like the most. I try to vote in polls like these by deciding who is the most skilled musician. I'm not too big of a fan of Chris Poland, but I wouldn't vote for him for awhile because he is obviously a very skilled player. That said, I don't find Slash to be a very good guitarist in comparison to Zappa, particularly. I hope that makes sense.

I always take "the best" on fora with a grain of salt.

When we are with more than one person, a term like "the best" can never be defined, it will always be "what's your favourite". In these situations there really isn't much difference. It still will be a subjective choice.

If we all would do this, then it'd be boring and predictable, wouldn't it? If you would like people to use objective criteria or think that people have the same judgement, then it wouldn't be a game. So taste will prevail.

No he's not. Maybe he is not that good of a guitarist, but as a musician ? You can't say a darn thing.
