Oh, I finally thought of the one and only for me. I saw Rob Halford open for Maiden in 2000 and Judas Priest 4 years later.
Which musician have you seen live with most different bands?

Only one I can think of off the top of my head that I've seen in three different combos: Bernie Worrell. Saw him play keyboards as part of Bootsy's New Rubber Band; the P-Funk All-Stars, and with his own group the Woo Warriors. Others, two different bands max.
EDIT: One other: Eric McFadden - a monster guitar player. Seen him play with P-Funk All-Stars, with his own Eric McFadden Trio, with a funk/hard rock trio project called IZM (who put out one fantastic album, see video below - they go from the funk jam into the song around 4:55), and in a guest appearance with Gov't Mule.
