Snowdonia is highly recommended, but be prepared for the possibility of not seeing any of the spectacular views due to heavy fog. ;)
Shadow, do you know if this fog be predicted in any way (e.g. one day in advance) or could this happen very suddenly?
 
You can always give weather.com a shot ... they were pretty accurate in predicting fog during a few trips to San Francisco ... no idea how accurate it would be there though
 
It's Britain. The weather likes screwing around with us. It has a habit of being grey and cool with showers even when it's meant to be sunny, or blazing heat when it's supposed to be winter (February 2012).
The weather forecast can probably be treated as fairly accurate 2-4 days in advance, but all the most beautiful places have a habit of attracting low cloud. There's no obvious good time for a holiday, although I find April/May is often very nice
