Stairway is a great song but not metal. I like your list except for Pour some sugar on me.

And if you aren't familiar with Sugar's pop sound then I would recommend Leppard's longest song White Lightning. It's a heavier tribute to their decaded guitarist and almost like Pink Floyd at that time.

I don't even care if it's more like psychedelic/progressive/art rock.

The instrumental section is pretty forgettable but I can see where Iron Maiden got it's influence from.

Here you go, I feel like George Lucas after he made "major changes" to the prequels in response of the fans' critique.

These are not quiet the personal favorites of mine but represent well enough the genre all in all and emphasises epics.
 
I was about to attempt a list until I realized that I couldn't fit all 29 Ahab songs into a Top 10.
