Did Dave Murray ever play a guitar solo by himself on stage in the early days? They used to do guitar solos in their setlist. If so that's 6 strings.
Dave did indeed play guitar solos on his own in the early 80's all the time (e.g. RiR), with just Nicko out on stage with him. Would this count as "Maiden have played live with less than 10 strings"? Naw, & it's not what I had in mind; but Cried will take this as the best answer! :D

OK, so it wasn't something like Smith with a double neck (12 strings), Murray (6), Harris (4), Gers (6) = 28 strings. And then Bruce had an acoustic as well?

Maybe (at least) two people played with double strings (12 strings), during Journeyman for example? Just a wild guess.
