Edinburgh might be getting pretty busy at the end of July as the Fringe Festival starts a few days after you'll be there. You should miss the worst of it but you definitely won't be the only Americans in Edinburgh!
You'll also get to enjoy the pleasures of roundabouts in the UK - something which I didn't see any of during my two weeks in the US at the end of last year.
I'm not too familiar with the coastline between Edinburgh and Newcastle - only travelled along the coastline in a coach or train. It looks nice when the sun is out though! However I would suggest looking into Berwick-Upon-Tweed which has a lot of history due to having changed hands between Scotland and England several times back in the day. There's also Bamburgh which has an old castle (definitely not something you have in the US!) that features in Bernard Cornwell's Saxon novels. These have also been adapted into a TV series called The Last Kingdom and the author claims to be a descendant of the former inhabitants of the castle. @Brigantium may know that part of the world a lot better but it's on the wrong side of Newcastle from her.We actually have some roundabouts near us and I have driven through plenty in Europe. We are still finalizing plans, but I think we are going to spend a few days in Edinburgh, then a few days somewhere along the coast in a smaller town (open to suggestions if you have any). Break up the trip part city, part rural, part Maiden

There's also Hadrian's Wall! The ruins stretch inland from Newcastle in dribs and drabs. I think Hexham and surroundings are a good place to see it.
Part of Harry Potter was filmed at Alnwick Castle in Northumberland. Durham cathedral cloisters isn't used as much.And just south of Newcastle there's Durham which I've never been to but it looks spectacular from the train. Was some of Harry Potter filmed there?
You could also visit Janick's regular haunts in Middlesbrough such as the discount store.
