Rime, but only because EOTC ain't here. Sad!
EOTC isn't an epic... it is 2 or 3 in one ehehehehe :D
But of course an updated version with If Eternity Should Fail, The Red And The Black, The Book Of Souls and Empire Of The Clouds should be added.
And I stil think that Powerslave, Heaven Can Wait, Mother Russia, Afraid To Shoot Strangers, Fortunes Of War, The Unbeliever, Dream of Mirrors, Nomad, Blood Brothers, Ghost Of The Navigator, Dance of Death, No More Lies, Face In The Sand, Brighter Than a Thousand Suns, Longest Day, Benjamin Breeg, The Legacy, Isle of Avalon, The Talisman, Man Who Would Be King, When The Wild Wind Blows are epic songs too. Now You may not like some of these songs (I don't like a Handfull of them) but nonetheless I think they fit the definition quite nicely

Okay, so if we're talking about Maiden epics, the following are the ones that I personally think are outright epics:

Rime of the Ancient Mariner
Alexander the Great
Seventh Son of a Seventh Son
Mother Russia
Sign of the Cross
The Clansman
Dream of Mirrors
The Nomad
Dance of Death
Paschendale
Brighter Than A Thousand Suns
For The Greater Good Of God
The Legacy
Isle of Avalon
The Talisman
When the Wild Wind Blows
The Red and the Black
The Book of Souls
Empire of the Clouds

All others don't really scream "epic" to me, at least not "epic" as in "an epic".

Heaven Can Wait
Afraid To Shoot Strangers
Fortunes Of War
The Unbeliever
Ghost Of The Navigator
No More Lies
Face In The Sand
Benjamin Breeg
The Man Who Would Be King
If Eternity Should Fail

... and I don't even like a handful of songs I mentioned
