Saw them play 2 Minutes in Sheffield on the FF World Tour: was easily the weakest song of the night IMO. For that reason, it wouldn't be on the dream setlist. Every other song played that night probably has a fair shout. But since I've seen those, I'll make a set of songs I haven't seen, plus the usuals:

An interesting concept would be a singles tour; the rules being that the band can only play songs that they released as singles. It would immediately cut huge swathes of tracks out: Dance of Death, Paschendale, These Colours Don't Run, Powerslave, The Final Frontier. In fact, we would be left with (deep breath):
