I just want to check out some good playing from different genres, so throw me some of your favourite guitarists who do NOT belong to Metal, Hard rock, any Metal-adjacent or heavy rock sub-genres.

Some of the ones I like:

Steve Lukather (Pop, Funk, Jazz, Prog, various genres)


Stevie Ray Vaughan (Blues)


Carlos Santana (Latin, Jazz fusion)


Joe Bonamassa (Blues)

Gary Moore (Although he played Hard Rock and Metal, he also played Jazz Fusion and Blues
Santana (his 70's albums are awesome)
Alex Lifeson (Rush)
Al Di Meola
Adam Holdsworth
Joe Pass
Rory Gallagher
David Gilmour
Martin Barre
Steve Rothery (Marillion)
Steve Hackett
…and many more
 
Although I'm not really a jazz person anymore, Django Reinhardt transcends the genre and is truly one of the greats and listening to him is always enriching, educational, gratifying and overall amazing.
Also, Al Di Meola and Paco de Lucia are there for me as well.

Pretty much everyone who's ever been in the Allman Brothers - Duane, Dickey Betts, Warren Haynes, Derek Trucks. Billy Gibbons' not bad either.

Some of the prog greats, like Robert Fripp, Steve Hackett, Martin Barre.

One of the reasons to listen to the first cca 12 Chicago albums is Terry Kath. Only the very first album is truly legendary, but Kath is also one of the most underrated and unjustly forgotten axemen.

Returning to them some time ago, I was surprised at how "juicy" the classic GnR sound was and that I genuinely like Slash.

People always say Gary Moore and yeah, he was really good as a player and often even as a songwriter, but his production often sucked mercilessly. I see your Moore and throw in Rory Gallagher, who isn't mentioned as often, altogether unjustly, and I might actually like him even more. Not as versatile, but potentially more captivating.

Also, besides Moore, pretty much everyone who's ever been in Thin Lizzy.

Always had a soft spot for Graham Coxon.

This is a very good list. I've recently dipped my toe into listening to Toto, and I love his playing. Regarding Bonamassa, while he is famous for his blues stuff, he has released like 6 hard rock albums with Black Country Communion (heavy Deep Purple vibes) with Glenn Hughes. Bonamassa sounds killer playing that stuff too, and he's got a keen sense for hard rock riffing.

I like Jimi Hendrix. Have gotten a minor taste of Jeff Beck. Will check out the rest.

Yeah, I'm familiar with Black Country Communion. Bonamassa does venture into the Hard rock category very well.

Robert Johnson is the huge tree and everybody else its branch. He lived 90 years ago, was murdered at 28 and recorded 29 songs. Blues acoustic guitar. He was so good that legend has it he sold his soul to the devil at the crossroads, Rosedale, Mississippi. Any song /reference you have heard about crossroads it’s about him.
