I can't say I have ever noticed him say "it is what it is" in video interviews either, although he does overuse the phrase "you know" an awful lot.
Edit: Steve Harris on the other hand used "it is what it is" in a lot of BL related interviews.
I agree about the bass levels on Live Chapter, but I noticed it gets louder around the 4th or 5th song. Compare track 1 or 2 back to back to later tracks and it's quite surprising. I think they dropped the ball somewhere and should have compared the separate songs to one another so that it would...
If you can get past his style, he actually makes quite a few valid points and places videos and interview clips at just the right moments. He is clearly a fan of the music but doesn't necessarily worship anything and everything Maiden does regardless, which I found quite refreshing.

This is a really interesting and pretty damn funny Maiden retrospective, including plenty of interviews and a refreshingly un fan-boyish approach. It's well worth a watch!
You are probably right. I remember the Hi-On site was based accurately on the real Maiden web site, although oddly it hasn't been updated, despite Hi-On Maiden playing in 2019.
