That must be the only thing EA are selective about, as ruining franchises seems to be a favourite hobby of theirs :P I've never forgiven them for Command and Conquer!

It's what makes the track so fun, without it it would be a lot more generic imo.

Consoles often do better graphics, mostly because developers have fixed specifications to work with so they can squeeze everything out of it rather than having to make sure it runs on many millions of combinations of parts like a PC. But consoles may as well just be a massive graphics card...

Whilst I enjoy the Maiden instrumentals I wouldn't deem any of them to be the best instrumentals out there, there are many many others that I enjoy more. For Ghengis, I enjoy the second half more, but the first half there is far too much emphasis on speed for my liking.
