Also, for the sake of comprehensiveness - many people like Nilsson's Without You much more than the Badfinger original (though not me).
 

Du Hast by Rammstein, covered by a Mongolian folk metal band. These guys also did Master of Puppets, Symphony of Destruction and others, but strangely enough not Genghis Khan.
 
Priest - Diamonds and Rust, Green Manalishi and maybe Johnny B. Goode

Maiden - WIU, I've Got The Fire, Juanita, That Girl (I like both versions), Doctor Doctor, Space Station No. 5, Roll Over Vic Vella (with different lyrics, but this cover is ace)...... everything that Maiden touches turns to gold, even a weak song.

I'm torn about saying it's better than the original, but I absolutely love Placebo's take on Running Up That Hill by Kate Bush.


And this killer cover of Maiden's Speed of Light by my favourite new band, Reigning Days. So good I can actually forgive the breakdown.

 
A few good ones have been mentioned already, including the obvious best ever one, jimi's version of All along the Watchtower.

This one is up there as well.
