I'm not sure how much freedom Simon has on decisions like that. I can't imagine Steve or Adrian preferring something different and Simon going "nah, let's do it this way". I believe what we are hearing here is what was agreed upon by the others.

Huh? He does eighth notes for the most part. In the beginning it sounds like he's stressing the off-beats, because the rest isn't in sync yet. Then he continues with the 1/8 notes, with a few 1/16 flourishes at the end of the measure.
